where i work we start baking at 1 am till around 9 or 10am, sometimes i have to come in early because someone called off, so sometimes like midnight or 11pm and work all night long.

being a baker is long hours on your feet doing a lot of the same stuff over and over.

Up Nawth here bakers usually work from around 3am in small private bakeries. If you work for a wonder bread type company they usually bake around the clock but you can still expect to work at least an 8 hour shift.
