I am a former chef from canada and worked for almost 30 years in the business, 20+ years in the Hotels side of the business. I had very few experience with "bad" chef, in my early days back in the 1970's I worked for a few temperamental ones, some what vulgar and they took there title to literally. Most time the Executive Chefs I worked for were European, and they tend to be hard to work for, the older ones.
I always tried to discuss the issues of the kitchen with my superiors, but there are people I worked with who had some very bad experiences, abusive and alcoholic one are the worst.
